Do you have a secret ingredient you like to use in vegan baking?
My secret ingredient for vegan baking is often Apple puree. It’s a great last minute egg substitute and makes bakes goods moist while adding a subtle sweetness x
My secret ingredient is date puree when making raw cookies. so good!
Mashed banana and I always add some cinnamon, love that stuff!
Yes, Loving Earth Organic Vanilla Bean Powder…it not only adds a bit of dryness to “thicken” things up a bit, but adds a lovely vanilla flavour.
Nutmeg. It’s the spice of life. It always adds the impact, I am looking for in my cooking.
Chia seeds…
I love medjool dates for that bit of extra sweetness 🙂
Avocado or bananas. I know it’s not very secret to all the vegan lovers but to my boyfriend and family, I love hiding healthy ingredients into sweets to slowly transform them into healthier eating! I never tell them until after they’ve eaten it and said how delicious it was!
Eggplant – mix it through meatballs and base for veggie lasagne – not ingenious but tasty

I absolutely love including dried fruit, its no hefty secret but I love that sweet and sour taste of earthly goodness with the suns kiss x
Coconut flour! I substitute 1/4 of the total flour for coconut flour in cakes, muffins, pancakes and it makes everything extra fluffy!
Bananas for EVERYTHING!! banana muffins, banana pancakes, banana bread It’s such a good vegan ingredient and I use it to sweeten things naturally. I just signed up to your newsletter and have been reading some of your blogs, Love it!!
Sweet potato or pumpkin! I feel like there are quite a range of options when it comes to vegan baking sweeteners such as apple sauce, brown rice malt syrup, maple/agave, date/banana puree, but I always get stuck when it comes to savoury baking! I find sweet potato/pumpkin adds an extra dimension to vegan pizza spread when mashed and mixed with tomato paste, sweetens sweet potato soup and vegan shepherd’s pie! It also works well in sweet baking! I just puree it and add it into sweet potato brownies, muffins, and my favourite, Paleo Pumpkin-Cacao Brownies! They always have family/friends asking about the authentic taste 🙂
Flaxseeds, soak in warm water for a while, and you have the perfect egg replacement! Fingers crossed for this prize, they will be awesome for the school holidays. Thanks.
Coconut flour ! You can do so much with it. I love using it to bulk up my bliss balls, and it adds a divine flavour to curries.

chia seeds, great for an egg replacer and also for puddingy type things, no taste but the texture is quite something 🙂
Sweet potato or cinnamon! Love the texture that sweet potato adds and cinnamon just because I love cinnamon!
Cardamom and blueberries made in heaven together! so sexy leaves you with a Mmmmmmm taste in your mouth!!
For vegan cakes, I use apple puree and make the best vegan chocolate fudge brownies! And all of my friends (vegan or now) agree 🙂
definitely apple puree. I don’t like to use oil so apple puree gives a great texture and adds some sweetness so that I can use little no sugar too.
I’m pretty new (as in like 6 mths) to the vegan world but I’m always so flipping amazed at the uses/ amount of recipes that call for raw cashews! It actually blows my mind. I thought I liked cashews before but NOW! Gosh me and that little nut are the best of cooking comrades! Can’t wait to learn and expand my repertoire!

Chia “egg”- a few tbs of chia(3) plus some water (6tbs) makes a great egg substitute
Way over ripe bananas! Mash them up and it’s the perfect binding agent for any sweet baking! You can usually pick up a 5-10kg box at the markets and cos they are all brown and bruised (the best kind) they sell them for super cheap to get rid of them! Cut them all up and freeze – easy and ready for when you need to bake anything or add to your smoothies 🙂
Dutch cocoa powder, high quality cocao makes such a difference to taste and adds antioxidants to any raw treat!

The secret ingredient I like to use in vegan baking is … flax! Great egg substitute.
Definitely dates! So easy to blend up and adds sweetness to any recipe x
i love adding apple sauce in place of oil to make it a bit healthier! it gives a great texture too. everything always tastes delicious when i use it.

I use red rice flour when making gluten free items, gives a nice colour as well as flavour & texture

CHIA SEEDS! Wow what an invention – those delicious little seeds somehow find their way into every single one of my vegan desserts and soaked in water overnight with a tbls of cacao powder… what a treat!
